Mmmm... Leftovers

Nutrition:

11:00: 5 slices of Pizza.

17:00: 6oz Ground Beef, Romaine, 1 Avocado, 2tbsp Sour Cream, Salsa. 18 Cherries

20:30: 1 serving Curry Chicken Salad. 4oz Blueberries.

New Recipe:

Curry Chicken Salad:
2lbs Chicken Breast
Olive Oil Mayo (see below)
Slivered Almonds
Currants
Celery
Curry Powder

Boil Chicken Breast, drain, cool, then shred. Combine with rest of ingredients. Makes 4 servings for me.

Olive Oil Mayo:
1cup Olive Oil
2 Eggs
1tbsp Lemon Juice
1tbsp Water
1tsp Dry Mustard
1 dash Cayenne

Place 1/3 of Olive Oil plus remaining ingredients in a blender, set to lowest setting, slowly drizzle rest of Olive Oil while mixing.
